Greenock Creek, established in the 1970s as a family venture in the Barossa Valley's Greenock subregion, draws fruit from premium dry-grown vineyard sites. The 2006 vintage saw warm spring conditions and a long, even growing season through summer, allowing the Shiraz vines to achieve full physiological ripeness. Soils are typical of the region—sandy loam with ironstone—providing drainage and concentration. John Coburn's involvement in sourcing reflects the estate's commitment to premium old-vine selections from the district's finest blocks, emphasising site-driven character over volume.

Fruit was hand-harvested from mature vines and processed through traditional winery methods typical of the mid-2000s Barossa approach. Fermentation occurred in open vats with regular pump-over during the primary stage, extracting colour and phenolic ripeness. Maturation took place in French oak, allowing the wine to develop secondary complexity over an extended élevage period. The 2006 release reflects a fuller, riper style of Barossa Shiraz fashionable in that vintage, with alcohol levels reflecting the warm season's ripeness.
