Vineyard Cultivation

Mercer Wines is a Hunter Valley producer led by winemaker Aaron Mercer, known for his focus on preservative-free winemaking in Australia. The Pinot Grigio is grown in the Hunter Valley of New South Wales, one of the country's oldest wine districts, on the region's mix of sandy and clay-loam soils in a warm, humid maritime climate that demands early picking to hold freshness. Farming follows sustainable practices, with fruit picked at modest ripeness to retain the natural acidity and delicate aromatics suited to a crisp, dry Grigio style rather than a richer Gris expression.

Vinification

Fruit was harvested early to preserve acidity and its pale, delicate character, then gently pressed with limited skin contact to keep the wine fresh and pale straw in hue. Cool fermentation in stainless steel retained the primary aromatics of white flower, almond nougat, pear and citrus, and the wine was made in a dry, crisp style. Consistent with the house philosophy, the wine was made with minimal additions and a preservative-conscious approach, then bottled early and unoaked to emphasise its crunchy, refreshing acid line and clean finish.
