Vineyard Cultivation

Mercer Wines is the Hunter Valley label of Aaron Mercer, widely regarded in Australia for preservative-free winemaking. The Vermentino is grown on the Roxburgh vineyard in the Upper Hunter Valley, a warm inland district where the naturally high-acid, drought-tolerant Mediterranean variety is well suited to a changing climate; Mercer argues no other variety better represents a sustainable growing future in the region. Farming favours vine health and natural acid retention. The 2025 season delivered bright, crunchy fruit; earlier vintages have been praised for vitality and composure, and the house aims for a textural, energetic white with tangy citrus definition rather than overt weight.

Vinification

The wine is made in Mercer's preservative-free style, emphasising clean, careful handling to protect freshness without added sulphur. Vermentino's naturally high acidity underpins a bright, textural palate of tangy citrus, with crunch and energy the stated goals. Fermentation is handled to preserve primary fruit and the variety's characteristic grip and phenolic texture, giving a lively, drink-young white.
