MMAD Vineyard's 2021 Shiraz draws from the house vineyard holdings within McLaren Vale, South Australia's premier Shiraz region. The vineyard benefits from McLaren Vale's Mediterranean climate and distinctive soil composition—predominantly sandy loam and limestone derived from ancient marine deposits. The 2021 growing season was moderately warm with balanced water availability, creating ideal conditions for Shiraz phenolic development. The vintage produced berries with natural concentration and ripe tannin structure without excessive alcohol. Careful canopy management throughout the growing season optimised sun exposure whilst maintaining freshness. The vineyard employs conservative cropping levels to ensure fruit quality and natural ripeness, with selective handpicking during optimal harvest windows.

The 2021 Shiraz harvest underwent careful destemming and indigenous yeast fermentation in temperature-controlled stainless steel vessels. Maceration extended through fermentation to extract rich colour, tannin, and aromatic complexity. Post-fermentation, malolactic fermentation softened acidity and added subtle texture. Oak ageing spanned approximately 14–16 months in a combination of French and American oak, contributing secondary flavours and structural balance. The wine was handled gently through the ageing period, with minimal racking to preserve fruit expression and textural weight. The final wine expresses McLaren Vale's characteristic berry, spice, and dark chocolate notes.
