Mountadam is a high-altitude Eden Valley estate, established by David Wynn and his son Adam in 1972 on a rocky outcrop high in the Barossa ranges. The vineyard sits at around 550 metres on free-draining, quartz-strewn soils, with an easterly aspect and cool nights that preserve acidity and aromatic freshness. All fruit for this Pinot Gris is grown on the single estate. The 2025 Eden Valley vintage benefited from a mild, even ripening season, giving the variety clean apple, pear and guava aromatics with fine natural texture. The estate is farmed as a self-contained single site.

The Pinot Gris is whole-bunch pressed and cool-fermented in stainless steel to protect its delicate apple, pear and guava aromatics and preserve the variety's fine phenolic texture. A portion may see extended lees contact to build mouthfeel, while the wine is kept largely unoaked and fresh, with crisp Eden Valley acidity carrying the finish.
