Vineyard Cultivation

McLaren Vale's 2015 vintage was moderately warm and dry, following a mild spring that allowed even bud break and steady canopy development. The reserve parcels are positioned in the heart of McLaren Vale's red soil district, where cabernet sauvignon has thrived since the region's establishment as a premium site for the variety in the 1950s. The combination of moderate winter rainfall and warm, even growing conditions created ideal ripening conditions. Older vine blocks contributed mineral complexity and tannin development, whilst adequate canopy management prevented excessive heat stress on the fruit.

Vinification

The 2015 harvest occurred in late March at optimal phenolic ripeness. Cabernet was whole-bunch crushed and cold-soaked for seven days to extract colour and develop tannin structure before inoculated fermentation in stainless steel. The fermentation period extended to twelve days with regular manual pump-overs, building mid-palate weight and complexity. The finished wine spent twenty-one months in new French oak from Allier cooperage, developing vanilla and spice notes whilst the tannins integrated. Gentle racking between oak barrel lots ensured minimal oxidation, with a final assemblage prior to bottling after eighteen months in wood.
