Vineyard Cultivation

Langhorne Creek's 2022 growing season allowed shiraz to fully ripen despite the region's cooler profile compared to warm sites such as Barossa. The reserve fruit was sourced from north-facing slopes where solar exposure optimised phenolic development without excessive heat stress. Langhorne Creek's gravelly, well-drained alluvial soils yield shiraz with refined tannin structure and lifted aromatics compared to hotter regions. Older vine blocks in Noon's Langhorne Creek holdings deliver concentration and complexity, balanced by the region's natural acidity preservation. The cooler site imparts savoury, peppery notes characteristic of cool-climate shiraz.

Vinification

March 2022 harvest brought ripe shiraz from Langhorne Creek fruit to the winery. Whole bunches underwent a five-day cold soak prior to fermentation to extract maximum colour and develop tannin structure without harsh extraction. Fermentation proceeded in temperature-controlled stainless steel for twelve to fourteen days, with manual pump-overs three times daily to manage tannin development. The pressed wine aged for twenty months in French oak (primarily Allier cooperage) and a small proportion of new American oak, the combination providing vanilla and spice without overwhelming shiraz's primary dark fruit and pepper notes. Bottling occurred with gentle pad filtration.

Wines are produced in several regions throughout the state, though many are naturally grouped together, like Barossa and Eden Valleys, only 15 minutes apart. They include such regions as Barossa Valley, Clare Valley, Eden Valley, Coonawarra, Adelaide Hills, Kangaroo Island, Langhorne Creek, The Limestone Coast, McLaren Vale and Wrattonbully to name but a few!

Barossa Valley boasts some of the oldest vines in Australia dating back to 1843 and produces some of the world's finest Shiraz, whilst the 'terra rossa' soils of Coonawarra is most suited to producing outstanding Cabernet Sauvignons. If you're a fan of Riesling, Clare Valley is a great place to explore and for a Maritime climate not dissimilar to parts of the Italian coastline, seek out the wines from McLaren Vale.
