Núria Claverol is the premium cava line of the Sumarroca family in the Penedès, Catalonia, named in honour of the family matriarch. The Blanc de Noirs is made from Pinot Noir grown on the family's estate vineyards, farmed organically on the limestone and clay soils typical of the inland Penedès. Elevation and the diurnal temperature swing between warm Mediterranean-influenced days and cool nights help preserve the acidity and finesse required of Pinot Noir vinified white for sparkling. The 2016 season in the Penedès was broadly kind, ripening Pinot Noir to a balance of red-fruit depth and freshness suited to long Gran Reserva ageing. Sustainable, low-intervention viticulture and selective picking underpin the estate's terroir-focused approach.

Pinot Noir is hand-harvested and gently whole-bunch or direct pressed to draw pale, clear juice with minimal skin colour, producing a Blanc de Noirs base. After a first fermentation the wine undergoes a second fermentation in bottle by the traditional method. As a Gran Reserva it ages on its lees for a minimum of thirty months, and usually longer, gaining fine mousse and toasty, patisserie complexity around a core of subtle red-apple and stone-fruit character imparted by Pinot Noir. It is then riddled, disgorged and finished to a brut style. The wine shows structure and vinosity with a creamy, persistent bead. Exact lees duration and dosage were not individually confirmed.
