Critic Scores

Peter Gago now describes Bin 707 as 'the Grange of cabernet' and its price is certainly heading this way (2019 was $650 and there was no 2020, so a jump to $800 represents the only significant price rise in the Penfolds release this year). But there's no doubt this is a vintage with the stature and endurance to support his association, with more than 50% sourced from Coonawarra in what he rightly considers one of the greatest seasons since 1991. The explosion of chalk mineral tannins, the brightness of acidity and the mesmerising confidence with which it holds its line and length in suspended animation make this one of the greatest and most enduring Bin 707s in the long lineage of this fabled label.

Great to see this famous wine back. The fruit comes from Coonawarra, the Barossa and Wrattonbully, so there is quite a deal of cooler climate fruit influence in here. It gets 100% new American oak for 16 months making it one of the most idiosyncratic Australian cabernets. An engaging mix of mulberry and raspberry underpinned by deeper blackcurrant notes. The tannins have an almost glistening character adding brightness and energy through the very long palate. But then there is a creamy spicy roasted meat character adding further to the complex weave of flavours. One of the very best I can recall since this great wine was re-introduced from 1976. Plush, opulent and powerful.

This stellar Cabernet sources its fruit from Coonawarra, Barossa and Wrattonbully. It spent 16 months in new American oak hogsheads. An opaque maroon colour, there are notes of dusty red earth here. Chocolate and tobacco leaves, soy, dried herbs, florals and aniseed. Hints of animal skins add to the complexity. There is serious intensity and focus, exemplary balance. With time in the glass, notes of both red and black fruits become ever more dominant, primarily blackcurrants and raspberries, backed by a slippery texture and satiny tannins with real persistence on a very long finish. Finesse and power. The nose is gorgeous, the palate even better. A twenty year proposition.

Vineyard Cultivation

Penfolds Bin 707 represents a carefully-curated blend assembled from multiple premium South Australian vineyards, with the Cabernet component sourced from Penfolds' holdings in renowned regions—typically including parcels from Coonawarra and the Barossa. The blend strategy prioritises ripe, structured Cabernet fruit capable of ageing gracefully. Viticulture across these sites emphasises sustainability and precision canopy management to balance vigour and fruit quality. The 2021 growing season presented moderate ripening conditions following Australia's cool 2020 vintage; growers harvested at peak phenolic maturity to achieve the concentrated fruit character Bin 707 requires.

Vinification

Penfolds' Bin 707 methodology involves fermenting selected parcels separately in controlled-temperature vessels to maximise fruit extraction and tannin development. Post-fermentation, the wine underwent extended ageing in a percentage of new French oak (the precise proportion is proprietary but typically substantial, reflecting Penfolds' house style) combined with older oak, for approximately 18 months. Oak integration is a key element of the Bin 707 signature—the wine is designed for early accessibility whilst retaining cellaring potential. Final blending of vineyard parcels and refined wood ageing completed before bottling.

About this Wine

Penfolds

Penfolds was established in 1844 by a young English doctor, Dr Christopher Rawson Penfold. He built a cottage in Magill, on the outskirts of Adelaide with his wife Mary, and it was around this site that vine cuttings from the South of France were planted. Peter Gago joined Penfolds in 1989, and in 2002, he became Chief Winemaker. He leads an incredibly talented and experienced winemaking team who follow the traditions established by Penfolds previous owners.

Penfolds house style wines embrace the idea of multi-regional blending, optimum fruit quality, the use of fine-grained American and French oak and most often, barrel fermentation and maturation. Penfolds has played a big part in the evolution of winemaking in Australia - and across the world. Their biggest viticultural regions include Adelaide, the Barossa Valley, the Clare Valley, Coonawarra, Limestone Coast, and McLaren Vale. In total, grapes are sourced from more than 220 vineyards across Australia and only the best are chosen.

South Australia

If you like Australian wine, then you probably like South Australia wine. The rich reds produced there put Australia on the wine-making map of the world. With over 40% of the countries vineyards, South Australia can rightfully call itself the wine state.

Wines are produced in several regions throughout the state, though many are naturally grouped together, like Barossa and Eden Valleys, only 15 minutes apart. They include such regions as Barossa Valley, Clare Valley, Eden Valley, Coonawarra, Adelaide Hills, Kangaroo Island, Langhorne Creek, The Limestone Coast, McLaren Vale and Wrattonbully to name but a few!

Barossa Valley boasts some of the oldest vines in Australia dating back to 1843 and produces some of the world's finest Shiraz, whilst the 'terra rossa' soils of Coonawarra is most suited to producing outstanding Cabernet Sauvignons. If you're a fan of Riesling, Clare Valley is a great place to explore and for a Maritime climate not dissimilar to parts of the Italian coastline, seek out the wines from McLaren Vale.
