La Grande Récolte 2012 is Pierre Paillard's ultimate expression of the Grand Cru terroir of Bouzy, crafted only in exceptional vintages from the family's finest parcels of Pinot Noir and Chardonnay.
Composed of 55% Pinot Noir and 45% Chardonnay, this prestigious cuvée reflects the remarkable balance, precision and longevity of the outstanding 2012 vintage. Matured for ten years in the Paillard family's cool underground cellars before release and finished with an exceptionally low Extra Brut dosage of less than 1g/L, the wine is presented with remarkable purity, allowing the fruit, terroir and extended ageing to speak with absolute clarity.
The bouquet reveals layers of blood orange, red berries, toasted brioche, roasted nuts and crushed chalk, while the palate is both powerful and refined. Silky, persistent bubbles carry vibrant citrus and mineral notes through to a long, saline finish, creating a Champagne of extraordinary tension, depth and elegance. A superb gastronomic wine, it pairs beautifully with lobster, caviar, scallops and other refined seafood dishes, while possessing the structure to continue evolving gracefully in the cellar.
The Paillard family's roots in Bouzy date back to the 18th century, with the estate remaining in family hands for more than eight generations. Since Antoine Paillard first acquired vineyards around 1768, the family has dedicated itself to showcasing the unique character of this celebrated Grand Cru village, renowned for producing some of Champagne's greatest Pinot Noir.
Today, Pierre Paillard remains an independent family domaine farming exclusively Grand Cru vineyards, where meticulous vineyard work and traditional winemaking are combined with a modern pursuit of precision. Their philosophy is simple: allow the richness and structure of Bouzy's Pinot Noir to be elevated by the elegance, freshness and chalky minerality of Chardonnay.
