The 2021 Margaret River vintage was notably cool and dry, with spring moisture adequate for vine establishment and a dry, lengthy ripening window extending into late April. These conditions particularly favoured Cabernet Sauvignon, allowing phenolic ripeness to develop without excessive sugar accumulation. Pierro's VR parcels, planted on the estate's premium terroirs with deep limestone influence, thrived in the cool conditions, producing grapes of excellent balance. The lower vigour imparted by the dry season concentrated flavours without the over-ripeness risk of warmer years. Late ripening ensured full maturity, with the cool finish preserving fresh acidity through to harvest. The 2021 vintage ultimately expressed Margaret River's finest Cabernet characteristics: structure, elegance, and cellaring potential.

Hand-harvested VR Cabernet was destemmed and fermented with selected yeast strains for controlled, extractive fermentation. Extended maceration (approximately 3–4 weeks) during and after fermentation developed the wine's considerable tannin framework. Post-fermentation, the wine was transferred to French oak for approximately 18 months' maturation, utilising a high proportion of new oak (typically 75% new, 25% neutral) to match the cool vintage's robust tannin structure. Periodic racking refined the tannins whilst barrel-ageing; natural settling and minimal filtration preserved complexity. The 2021 wine was bottled with no fining agents, maximising its age-potential.
