Tasting Notes

This wine is a light straw colour with lime hues. The nose explodes from the glass with sweet sherbet, lemon, lime and jasmine aromas. The palate is creamy and refreshingly zingy with lemon, lime acidity. Apples and hints of ripe pear continue to entice the palate, with hints of vanilla. The wine has lovely length and softness, and playful bubbles, with a touch of sweetness but a long dry finish. Serve with Sydney rock oysters or lightly grilled scallops topped with lemon zest.

Vineyard Cultivation

Pizzini Wines is a family winery in the King Valley of north-east Victoria, run by the Pizzini family, whose Italian heritage shaped the region's leadership in Italian varieties including Prosecco. The Prosecco is made from Glera grown in the King Valley, where vineyards climb from the valley floor into cooler, higher country on granitic and alluvial soils. The altitude and cool nights preserve the natural acidity and delicate aromatics Glera needs for a fresh sparkling style. As a Non-Vintage wine, it is built for consistency across seasons rather than a single vintage, with fruit picked at moderate ripeness to keep alcohol modest and retain the crisp, floral, orchard-fruit character central to the style.

Vinification

Glera is harvested and gently pressed, with the juice fermented cool in stainless steel to protect primary aromatics. The sparkle is created by the tank (Charmat) method, a second fermentation in pressurised tank that preserves fresh pear, apple and white-blossom notes rather than the bready character of bottle ageing. A short period on the fine lees before bottling under pressure lends a soft, frothy mousse. Finished in a crisp, off-dry to brut style, the wine is bottled young for immediate drinking, showing lively acidity and a light, spritzy bead. Exact residual sugar and dosage for the current release were not individually confirmed.
