Plus & Minus is a contemporary zero-alcohol range built around premium, dry-grown South Australian fruit and crafted by winemaker Corey Ryan. This Pinot Noir sources grapes from Langhorne Creek, a maritime-influenced district near Lake Alexandrina whose cooling afternoon 'lake doctor' breeze and deep alluvial soils give even ripening and soft, generous red fruit. The dry-grown emphasis is deliberate: concentrated, full-flavoured fruit is needed so that the wine retains vibrancy and varietal character once the alcohol is removed. The 2022 South Australian season was cooler and later than the run of warm years preceding it, favouring bright fruit and freshness well suited to a lower-intervention, alcohol-removed style.

The wine is first made as a conventional Pinot Noir — fermented on skins to build colour, red-fruit flavour and savoury character — before the alcohol is removed to reach a zero-alcohol result. The range is hand-made without artificial sweeteners, though grape seed extract, rich in naturally occurring antioxidants, is added during processing to lift the wine's antioxidant profile. Careful base-wine selection from ripe, dry-grown fruit is intended to keep flavour and structure intact through de-alcoholisation, retaining the dried herb, spice and touch of natural fruit sweetness expected of the variety.
