Tasting Notes
A beautifully energetic Chardonnay from the Full Moon Vineyard in Gladysdale, grown on red and brown volcanic soils. The final bottling from this site, it marks the close of an important chapter for Salo, with the wine moving towards a new vineyard source.
Whole bunch pressed and gravity fed to seasoned puncheons, with wild fermentation and 50% malolactic fermentation, it delivers striking florals, wattle blossom and honeysuckle alongside yellow plum, white peach and fresh mandarin skin. Fine mineral detail, whipped meringue and young almond give the palate both texture and lift, while vibrant citrus acidity drives a long, persistent finish.
A compelling expression of Chardonnay with energy, precision and serious cellaring potential. The acclaim is fitting: Steve Flamsteed has recently been named Winemaker of the Year by Halliday Wine Companion, recognising one of Australia’s most accomplished and distinctive winemaking talents.
