Tasting Notes

One of the rarest and most compelling mature releases from Champagne Salon, the 1985 is a profound expression of Chardonnay from the Grand Cru village of Le Mesnil-sur-Oger. Produced exclusively from Chardonnay and only in vintages Salon considers worthy of its name, this is Champagne stripped back to its essentials: one grape variety, one village, one vintage and an extraordinary length of maturation.

The 1985 growing season was one of extremes. Severe winter and spring frosts dramatically reduced the crop, with approximately one vine in ten lost across Champagne and yields significantly diminished. The season ultimately turned, however, with fine, sunny conditions through September and October allowing the surviving fruit to achieve excellent maturity. The tiny crop delivered fruit of unusual concentration and intensity, qualities that have defined the 1985 Salon throughout its long evolution.

Salon allowed the wine an extraordinary period of maturation before release, holding the 1985 until around the turn of the millennium. Approximately 20,000 bottles were produced, making it a particularly scarce Salon vintage.

Tasting Note

Now showing the extraordinary complexity that can only come with decades of bottle age, Salon 1985 pours a luminous deep gold, its mature colour immediately suggesting the richness and development to follow.

The bouquet is intensely complex and constantly evolving. Initial aromas of candied citrus peel, preserved lemon, golden apple and ripe pear give way to richer notes of baked apple, quince, dried fruit and honeycomb. With air, the wine moves increasingly towards the tertiary spectrum: toasted brioche, warm pastry, hazelnut, walnut, grilled almond and freshly baked bread, accompanied by touches of vanilla, toffee and gentle spice.

Beneath this richness remains the unmistakable mineral signature of Le Mesnil-sur-Oger. Notes of chalk, crushed stone, citrus oil and a faint saline or iodine character provide a counterpoint to the wine's mature fruit and autolytic complexity. At this age, exceptionally well-cellared bottles can also reveal more savoury nuances of truffle, mushroom, beeswax and toasted nuts, adding further layers without obscuring the underlying Chardonnay character.

The palate is broad, vinous and remarkably concentrated. Mature flavours of baked orchard fruit, lemon curd, orange zest, apple compote and honey are wrapped around a creamy, finely textured core. Toast, brioche, roasted hazelnut and walnut emerge through the mid-palate, while the wine's still-present acidity cuts through the richness and gives the 1985 remarkable definition.

The mousse is now exceptionally fine and delicate rather than exuberant, allowing the wine to present almost as a great mature white Burgundy with effervescence. This vinosity is one of the great pleasures of mature Salon: immense flavour concentration and textural breadth balanced by the chalky tension and citrus-driven acidity of Chardonnay grown on the Côte des Blancs.

The finish is exceptionally long, dry and savoury, moving from candied citrus and honeyed fruit through toasted nuts, chalk, brioche and subtle saline minerality. Even after decades in bottle, there is a compelling tension between richness and freshness, maturity and precision.

This is no longer Champagne defined primarily by its bubbles. Salon 1985 has evolved into a profound mature wine whose effervescence has become part of its texture rather than its dominant feature. At its best, it combines the power and concentration of the low-yielding 1985 vintage with the elegance, minerality and extraordinary longevity for which Salon is renowned.

Drinking & Service

Salon 1985 is fully mature and should be approached accordingly. Bottle condition and provenance are now critical, and variation between bottles should be expected after more than four decades. A well-stored example can still possess remarkable freshness, acidity and energy, but the emphasis today is firmly on mature complexity rather than youthful fruit or vigorous effervescence.

Serve at approximately 11–13°C, rather than refrigerator temperature, and use a generous white-wine or tulip-shaped Champagne glass to allow its aromatic complexity to develop. There is little benefit in aggressive decanting; instead, allow the wine to evolve gradually in the glass.

A Champagne of extraordinary rarity, complexity and historical significance, Salon 1985 is as much a great mature wine as it is a great Champagne.

An enormously complex and rich wine that almost defies description. Golden apples, raisins and pears; bread, cream, vanilla, honey and nuts. The list goes on and on. Full and rich; the mousse is extremely fine and creamy-textured in the mouth. Drinking beautifully now, it will probably hold another ten years or more. Tasted 2018 and in 375ml Format.
