Tasting Notes
The 1990 Salon is one of the great mature expressions of Le Mesnil-sur-Oger Chardonnay and a compelling example of the extraordinary longevity for which this singular Champagne house is renowned. Produced entirely from Chardonnay grown in the Grand Cru village of Le Mesnil-sur-Oger, Salon is made only in exceptional years, and 1990 stands among the most celebrated vintages of the late twentieth century.
The growing season was dramatic. Severe spring frosts affected a significant proportion of Champagne's vineyards, followed by challenging flowering conditions. What followed, however, was an extended period of superb weather through maturation. Harvest commenced in Le Mesnil-sur-Oger on 14 September, with Salon reporting exceptionally homogeneous Chardonnay and an outstanding balance between ripeness and acidity.
Tasting Note
Now more than three decades from vintage, Salon 1990 has developed into a magnificently complex, vinous Champagne, combining the natural richness of the 1990 vintage with the chalky structure and formidable acidity of Le Mesnil-sur-Oger.
In the glass, it displays a deep, luminous golden hue, with an exceptionally fine and delicate mousse.
The bouquet is expansive and immediately complex. Candied orange, preserved lemon and citrus peel sit alongside ripe orchard fruits, dried peach and hints of tropical fruit. With air, the wine develops a distinctly mature spectrum of honey, toasted brioche, hazelnut, almond and praline, before revealing deeper tertiary notes of black truffle, freshly ground coffee, smoke and gentle spice.
Floral notes remain surprisingly apparent beneath this maturity, particularly lime blossom and dried white flowers, bringing lift and perfume to an otherwise powerful aromatic profile. Underneath everything lies Salon's characteristic mineral signature: chalk, crushed stone and a subtle saline quality that prevents the wine's richness from becoming heavy.
The palate is broad, powerful and distinctly vinous. There is considerably more flesh and generosity here than in cooler Salon vintages, with ripe citrus, candied orange, baked apple, dried stone fruit and honey providing a rich core of fruit. These are layered with flavours of toast, brioche, roasted nuts, coffee and subtle smoky complexity.
Yet the defining feature of the wine is the tension underneath that richness. A persistent line of acidity runs through the palate, giving definition and freshness to a Champagne of considerable weight and concentration. Chalky minerality emerges through the mid-palate, creating a fascinating contrast between the warmth and generosity of the vintage and the naturally austere mineral structure of Le Mesnil Chardonnay.
The mousse has become extremely fine and integrated with age, contributing texture rather than dominating the wine. At this stage of its evolution, Salon 1990 drinks less like a conventionally sparkling Champagne and increasingly like a profound mature white wine with an extraordinarily delicate effervescence.
The finish is exceptionally long, layered and savoury, moving through candied citrus, honey and dried fruit into roasted hazelnut, brioche, coffee, chalk and truffle. A subtle saline-mineral character remains after the richer flavours have receded.
There is an intriguing duality to Salon 1990: rich yet precise, mature yet energetic, powerful yet elegant. The generosity of the warm 1990 vintage has given the wine remarkable breadth and texture, while Salon's naturally high acidity and mineral structure have allowed it to evolve over decades without surrendering its identity.
At its best, this is a monumental mature Blanc de Blancs, a Champagne of extraordinary depth, complexity and persistence that demonstrates precisely why Salon 1990 is considered one of the house's great twentieth-century releases.
Drinking & Service
Salon 1990 should be treated as a great mature wine rather than simply as an aperitif Champagne. Serve at approximately 11–13°C in a generous tulip-shaped Champagne glass or fine white-wine glass, allowing several minutes for the wine to open and evolve.
At more than 35 years from vintage, provenance and storage are critical. Individual bottles can vary considerably in their degree of development, while later-disgorged examples can present very differently from bottles disgorged closer to the original release.
For a well-cellared bottle, expect an extraordinary interplay between candied citrus, honeyed richness, toasted brioche, roasted nuts, coffee and truffle, underpinned by the chalk, acidity and mineral precision that define the greatest wines of Le Mesnil-sur-Oger.
