Tasting Notes

William Downie is a rising star of Gippsland, bringing his experience from Burgundy as well as icons like Bass Phillips and De Bortoli.

This wine exemplifies the essence of Yarra Valley Pinot Noir, showcasing a vibrant ruby hue with aromas of wild strawberries, red cherries, and subtle floral undertones of rose and violets. On the palate, it offers a seamless balance of delicate fruit purity, soft tannins, and a refined acidity that brings freshness to every sip. Nuances of forest floor, crushed herbs, and gentle spice round out a long, elegant finish.

William Downie crafts his Pinot Noir with minimal intervention, allowing the unique terroir of the Yarra Valley to shine. The result is a wine of purity, complexity, and authenticity, reflective of his hands-off approach and dedication to sustainable viticulture.

Critic Scores

It's brightly fruited and fragrant on the nose with sweet cherry, raspberry, floral, subtle spice, and toasted almond characters, leading to a silky-smooth palate offering excellent weight and fleshy texture. Wonderfully framed by layers of fine-grained tannins, making it firmly structured with a persistent, harmonious finish.

A cool-climate Pinot Noir with purity and restraint, made by legends Bill Downie and Jason Searle. Aromas of red cherry, cranberry, wild strawberry and subtle forest floor notes flow into a finely balanced palate. Light-to-medium bodied with silky tannins, bright acidity and gentle spice complexity, finishing long, savoury and precise. The wine shows excellent definition and composure throughout. Refined and expressive with classic Yarra Valley character.

Vineyard Cultivation

Save Our Souls is a Yarra Valley-focused label made in collaboration with Gippsland Pinot specialist William (Bill) Downie and Jason Searle, distributed through the Pure Wine Co. The Black Label is the flagship Pinot Noir, drawn from cool-climate Yarra Valley sites where deep red volcanic and grey sedimentary soils, altitude and a long, mild ripening season favour finely structured, aromatic Pinot Noir. Downie brings experience from Burgundy and from Victorian benchmarks including Bass Phillip and De Bortoli, and farms with a low-intervention, terroir-driven outlook. The 2025 season in the Yarra allowed a slow, even ripening that preserved bright acidity, purity and restraint in the fruit.

Vinification

Fruit was hand-harvested and handled gently, with whole-bunch inclusion used to add spice, perfume and tannin structure in keeping with Downie's minimal-intervention style. Fermentation proceeded with indigenous yeasts in open vessels, with restrained plunging to build texture without extracting hard tannin. After pressing, the wine matured in French oak, a small proportion new, completing malolactic conversion and resting on lees to gain the silky weight and fine-grained tannin noted by reviewers. Light fining and filtration preserved the wine's cool-climate definition, giving red cherry, cranberry and wild strawberry fruit, subtle spice and forest-floor complexity over a long, savoury, precise finish.
