A mid-weight Chardonnay from the Yarra Valley, this wine has a hint of oak and shows stone fruits mixed with citrus on the nose. The palate is long and fine with a touch of vanilla and honey–dew melon. Drink now or allow it to develop further over the next 3–5 years.

Drink with: classic roast chicken with crispy skin; or your favourite Brie or Camembert

Dixon’s Creek is situated at the Northern limit of the Yarra Valley.

2023 was a relatively cool year marked by significant rainfall in the early Spring. The rain eased but continued to fall regularly through the remainder of Spring before easing for a dry yet cool summer. Harvest started in early autumn, several weeks behind the long term average. These ideal conditions ripened the fruit slowly developing beautiful flavours whilst retaining lovely acid. Yields were small but quality was extremely good.

80% of the juice was fermented in stainless steelwith the balance going into seasoned oak. Both parcels went through Malo–lactic fermentation and were kept on lees. After 9 months in storagethe wine was sent to bottle after a light filtration

80% tank and 20% barrel fermented with both portions going through malo. Complex and savoury with its aromas of white peach and gun flint together with a touch of nuttiness. On the palate it's mouth-filling with a gentle creaminess, well balanced by the wine's bright acidity.

Vineyard Cultivation

Save Our Souls is a collaborative, minimal-intervention label made by William Downie and Jason Searle, drawing on fruit from several Victorian regions. The Chardonnay is sourced from the Yarra Valley, with the estate notes pointing to Dixon's Creek at the northern limit of the region. The 2023 season there was relatively cool, marked by significant early-spring rainfall that eased into a dry but cool summer. Harvest began in early autumn, several weeks behind the long-term average, and this slow, mild ripening developed flavour gradually while retaining fresh acidity. Yields were small but fruit quality was high, giving a mid-weight, savoury style of chardonnay.

Vinification

Around 80% of the juice was fermented in stainless steel, with the balance going into seasoned oak. Both parcels were taken through malolactic fermentation and kept on lees to build a gentle creaminess and texture, balanced against the wine's bright acidity. After roughly nine months in storage the wine was given a light filtration and bottled. The style is deliberately mid-weight and savoury rather than rich, showing white peach, gun-flint and a touch of nuttiness with a mouth-filling but well-balanced palate. It is built to drink on release yet can develop over three to five years.
