William Downie is a rising star of Gippsland, bringing his experience from Burgundy as well as icons like Bass Phillips and De Bortoli.

The King River flows down from the heights of Victoria’s Alpine region and has done so for millennia, slowly building a fertile plain of mineral rich alluvial soils.  These soils are the broken-down bones of Victoria’s famous high-country.  Cool air follows the river down from the mountains, settling in the valley and slowing the ripening of the fruit on the vines that sit alongside the majestic river.  This cool climate produces subtle but complex wines that are beautifully balanced and finely structured.

After pressing into stainless steel tanks, the juice was allowed to ferment slowly to preserve fruit character and freshness. The wine was chilled immediately when dry to prevent Malo-lactic fermentation and capture the lovely subtle characters of kiwifruit and white peach.  A moderate amount of acidity provides a bracing backdrop and refreshing finish.

Critic Scores

King Valley and pinot grigio were made for each other. There's a fineness of expression, a touch of the savoury and a glorious fresh juiciness here that is so right, so enjoyable, so refreshing. Honeysuckle and acacia notes run deep, underlined by dusty citrus, Asian pear and quince with a tweak of ginger root and lemongrass. Framed in brittle, tangy acid drive, it is deliciously good.

Vineyard Cultivation

Save Our Souls is a Victorian label produced with Gippsland winemaker William (Bill) Downie and Jason Searle under the Pure Wine Co. The Pinot Grigio is sourced from the King Valley in Victoria's alpine north-east, where the King River lays down fertile, mineral-rich alluvial soils on the valley floor. Cool air draining from the high country settles in the valley and slows ripening, giving fruit that retains freshness, natural acidity and fine aromatic definition well suited to Pinot Grigio. Downie's terroir-driven, low-intervention outlook is applied to fruit picked for a crisp, savoury style rather than overt ripeness, capturing the region's affinity with the variety in the 2024 season.

Vinification

Grapes were pressed and the juice run into stainless steel tanks, where a slow, cool fermentation preserved primary fruit character and freshness. To keep the wine bright and to protect its delicate kiwifruit and white-peach notes, it was chilled promptly once dry to prevent malolactic fermentation, retaining crisp natural acidity. Handling was minimal, with the wine kept in tank rather than oak to preserve varietal purity and a clean, textural profile. The result is a fresh, savoury Pinot Grigio with honeysuckle, dusty citrus, Asian pear and quince, framed by tangy acidity, in the fineness of expression Halliday's Wine Companion rewarded with 93 points.
