Savoury and earthy, a delicate blend of rose petal, violets and red cherry. A fine and subtle balance of fruit and tannin.

The King River flows down from the heights of Victoria’s Alpine region and has done so for millennia, slowly building a fertile plain of mineral rich alluvial soils.  These soils are the broken-down bones of Victoria’s famous high-country.  Cool air follows the river down from the mountains, settling in the valley and slowing the ripening of the fruit on the vines that sit alongside the majestic river.  This cool climate produces subtle but complex wines that are beautifully balanced and finely structured.

Modesty reigns.  A mid-weight wine to be slurped, sipped or shared amongst friends.

Critic Scores

Full-ish brick-red colour showing considerable devlopment. Complex, mellow, savoury aromas of dried herbs and pencil shavings, dried cherry and mixed spice, with a smoky oak character developing later. The wine is lean and sinewy, taut and long, with refinement and persistence typical of sangiovese. Great balance and mouth-feel. A lovely drink, very typical of the grape and a big contrast to your more typical Aussie fruit bombs.

Classic Sangiovese sour cherry is here in the front row, sweet almond a la whiffs of amaretti biscuits and bitter herb too. It’s pure and clean, fruity but firm, not overcomplicated, not very long but tight, very refreshing and juicy. Good wine with a clear definition of the fruit and a clearly stated good drinkability level.

Sourced from a King Valley vineyard at 350m elevation that's planted with the newest generation of sangiovese clones available in Australia. With its cherry plum and floral aromas, this immediately accessible and brightly fruited wine was made to be enjoyed with a margherita pizza in front of the TV on a school night.

Vineyard Cultivation

Save Our Souls is the minimal-intervention label of William Downie and Jason Searle. The Sangiovese is sourced from the King Valley in north-east Victoria, from a vineyard at around 350 metres elevation planted to the newest generation of sangiovese clones available in Australia. The King River flows down from the Alpine high country, over millennia depositing mineral-rich alluvial soils, and cool mountain air follows the river into the valley, settling and slowing ripening on the vines beside it. This cool-climate setting favours subtle, finely structured, savoury reds rather than fruit-driven ones. The 2022 season delivered fruit with the bright, sour-cherry lift and taut acidity typical of the site.

Vinification

The wine is made in a restrained, food-friendly idiom that keeps sangiovese's natural structure to the fore. Fruit was fermented on skins to draw out the grape's characteristic sour-cherry fruit, fine tannin and savoury edge, then pressed and matured in seasoned oak so that fruit definition and drinkability, rather than overt wood, drive the wine. The result is mid-weight and immediately accessible - pure, clean and juicy, firm but not heavy - showing classic sour cherry, sweet almond and amaretti-like notes with dried herbs and mixed spice. It is tight and refreshing, built for the table rather than long cellaring.
