Vineyard Cultivation

Shepherd's Hut is a boutique Porongurup producer in Western Australia's Great Southern, with its Riesling made by Rob Diletti, the winemaker behind Castle Rock Estate. 'The Hut' is the entry point to the range, drawn from Porongurup fruit grown on the sub-region's distinctive decomposed-granite soils. The Porongurup range - a spine of ancient granite peaks - moderates temperatures with cool nights and elevation, producing Riesling of purity, tension and a saline, mineral edge. The 2025 season yielded bright, finely detailed fruit, giving a wine of energy and clarity. Small-batch handling throughout reflects the site's cool-climate character and the emphasis on freshness over weight.

Vinification

Grapes were whole-bunch pressed and the juice fermented cool in stainless steel to preserve the lime zest, green apple and white-floral aromatics that define the wine. Fermentation was taken to dryness with no malolactic conversion and no oak, protecting the crystalline fruit and the fine, textural acid line. The result is a taut, mineral Riesling finishing dry and clean, built for immediate pleasure yet with the structure to reward short-to-medium cellaring.
