Tasting Notes

The land of the Sumarroca estate is poor, chalky and gravelly. The influence of the sea is diminished by the Garraf mountains which dry out the sea winds, while the pre-coastal mountain range protects the estate against dry winds from inland. These conditions produce highly elegant wines with a balanced, very fresh fruitiness. The Sabartés estate is located in the southernmost part of the Penedès region. The soil has a higher clay content with a loose texture. The estate is strongly influenced by the sea, being just a few kilometres from the coast. This Mediterranean character gives the base wine a fruitier tone.

Separate wine-making processes for each variety. Static filtration for 24 hours. Fermentation in stainless steel vats at 14ºC for 18 days. Aged in stacks for around 40 months.

Pale yellow colour. Fresh, complex aroma that mixes pastry notes from the cava’s 36-month ageing with light hints of fresh fruit from the base wine. Fresh and smooth on the palate, with very fine bubbles that perfectly complement the wine's complexity. An elegant, serious finish, long and dry, bringing out the essential flavour of the cava.

Vineyard Cultivation

Sumarroca is a family estate in the Penedes, based at Subirats between Sant Sadurni d'Anoia and Monistrol d'Anoia in the heart of D.O. Cava. The family, with roots growing vines in Pallars Jussa, built the estate from the 1980s and today farms around 220 hectares of certified-organic vineyard on poor limestone soils, cooled by breezes off the Garraf massif. For the 2021 Gran Reserva, the traditional Cava trio of Parellada, Xarel-lo and Macabeo is grown alongside Chardonnay, hand-tended for clean, ripe fruit with the firm acidity that supports long bottle ageing.

Vinification

Each variety is picked and vinified separately, with a gentle settling and a cool primary fermentation around 14C. The base wines are blended and bottled for a second fermentation by the traditional method, then aged on lees for a minimum of around thirty-six months to earn Gran Reserva status, developing toast, nutty and patisserie notes. After riddling and disgorgement it is finished Brut Nature, with no dosage added, to show the wine's natural drive and precision. Blend around 42% Parellada, 29% Xarel-lo, 22% Chardonnay, 7% Macabeo; exact 2021 proportions NEEDS VERIFICATION.
