Taka K is the personal label of Takahiro Koyama, the Japanese-born winemaker behind Koyama Wines in North Canterbury. This wine is sourced from the Pearson (Bedford Estate) vineyard in the Waipara Valley, a warm, sheltered sub-region of Canterbury where limestone and gravel soils and a cool, dry climate give Pinot Noir both mineral drive and ripe red fruit. Although a relatively young planting, the vineyard carries a strong clonal mix – Abel, Dijon 777 and Dijon 943 – chosen for depth and complexity. The 2022 season yielded bright, fresh fruit with a clear sense of place, its crushed-stone and limestone character running through the wine. The label's ouroboros motif signals themes of rebirth and renewal.

Fruit was harvested and fermented separately by clone to draw out the full character of each before blending, a method used to build depth and complexity across the finished wine. Fermentation gave a taut, dry, textured Pinot, with oak playing a supporting role – evident on the young bouquet but receding as fruit and minerality take over. Maturation in French oak barriques added structure without masking the crushed-stone, red-cherry and plum core. Fine, highly polished tannins and a crunchy, finessed acidity carry the palate, with the components blended and bottled to emphasise harmony of texture and length rather than overt power. Best drinking runs from 2024 through 2030 and beyond.
