Tasting Notes

Crafted to express the unique terroir of Terra Sancta Estate on Felton Road in Bannockburn. This Pinot Noir is as quality, layered and beautiful as the place it is from. Reflecting the aspect, soil type, vine age and microclimate of each block of the Estate, Pinot Noir of the highest quality consistently delivers a core of dark fruit, earthy beetroot, exotic spices and silky texture. Carefully crafted and minimally made using wild fermentation and subtle French oak, this is a gorgeous Pinot Noir.

Vineyard Cultivation

Mysterious Diggings comes from an exclusive Bannockburn vineyard sited between Burn Cottage and Felton Road in Central Otago, planted in 1999 to a mix of Pinot Noir clones on their own roots and farmed organically. The schist-derived, free-draining soils and Bannockburn's hot, dry days and cold nights concentrate the fruit, giving a core of dark fruit, earthy beetroot and exotic spice with a silky texture. The 2025 vintage is the follow-up to the celebrated 2024, carrying Central Otago's clarity and acid line into a wine that again expresses the site's aspect, vine age and microclimate.

Vinification

Fruit was hand-picked and carefully sorted, then wild-fermented in small batches with gentle, minimal-intervention handling. Cold-soaked before indigenous-yeast fermentation, the wine was pressed to subtle French oak, a modest portion of it new, for maturation and a natural malolactic fermentation, before a light bottling. The approach favours fragrance, silky texture and fine, savoury tannin, letting the vineyard's dark fruit, earthy and spiced character carry through to a fresh, layered finish.
