Turkey Flat Vineyards is a Barossa Valley estate at Tanunda whose oldest Shiraz vines date to 1847, making them among the oldest continuously producing Shiraz plantings in the world. The family-owned property farms these deep-rooted old vines on the alluvial and sandy soils of the Barossa floor, where the warm continental climate ripens Shiraz to full, dark-fruited concentration. Fruit for the sparkling is drawn from the estate's Shiraz across seasons, and as a non-vintage wine it is built on a solera-style reserve system rather than one harvest, selecting parcels each year to maintain a consistent, richly fruited house style suited to sparkling red.

Select Shiraz barrels are assessed each spring and matured in French oak casks within a solera system, layering older reserve material with fresh vintages to build depth and continuity. Chosen base wine is blended and then tiraged, undergoing a secondary fermentation in bottle in the traditional method, and aged on lees for around a year before disgorgement. After disgorgement the wine is liquored with Pedro Ximenez, giving the characteristic sweeter, fuller finish of Australian sparkling Shiraz while preserving its savoury, spicy dark-fruit core and firm structure.
