Tyrrell's Wines is one of the Hunter Valley's founding family estates, established at Pokolbin in 1858 and now run by the fifth generation of the Tyrrell family. The estate farms mature vineyards on the red volcanic and sandy alluvial soils of the lower Hunter, a warm, humid maritime region better known for Semillon and Shiraz. For its sparkling the winery blends Chardonnay and Pinot Noir, drawing on cooler parcels and earlier picking to secure the crisp acidity fine sparkling demands. As a non-vintage wine it is assembled across seasons to a consistent house style rather than expressing a single harvest.

Chardonnay and Pinot Noir are picked early to retain acidity, gently pressed and cool-fermented in stainless steel to make bright, delicate base wines. The blend is tiraged and taken through a secondary fermentation in bottle in the traditional method, then matured on lees to develop the fine bead and subtle biscuity, bready complexity that lifts its citrus and stone-fruit character. Following riddling and disgorgement the wine is finished with dosage in a crisp Brut style. Specific lees ageing time and dosage for this non-vintage release are not published by the winery.
