Tasting Notes

The Cabernet Sauvignon grapes used to produce this wine come from the Maule Valley, specifically the Cauquenes region. The conditions of this valley determine the wine's ripeness, richness, structure, and light sweetness, with an explosive finish. It displays an intense ruby red color and presents an aromatic nose with oak, red fruits such as raspberries, black currants, ripe cherries, subtle spicy notes, and chocolate. The palate is fresh with subtle herbal hints. This wine is balanced, accompanied by expressive tannins that give it a good balance and complexity between fruit and oak. It is ideal for pairing with beef, game, lamb, pork, and full-fat cheeses.

Vineyard Cultivation

Viña Undurraga, founded in 1885 and one of Chile's historic wine families, produces this Cabernet Sauvignon from their holdings in the Maule Valley, a region renowned for full-bodied, structured reds. The Aliwen Gran Reserva series represents the producer's premium tier, drawing from carefully selected parcels at optimal elevation and aspect. Maule's Mediterranean climate—warm, dry days and cool Pacific-influenced nights—provides the diurnal temperature variation that concentrates flavour whilst maintaining acidity in Cabernet. The 2023 vintage benefited from summer warmth and balanced rainfall, yielding ripe, phenolically mature fruit ideal for cellaring. Undurraga's viticultural practices emphasise sustainable viticulture, balancing canopy management with natural pest management.

Vinification

Cabernet grapes were hand-harvested at full ripeness and destemmed, then fermented in temperature-controlled stainless-steel tanks with selected yeasts to ensure consistent, clean fermentation. Extended maceration (typically two to three weeks) extracted colour, tannin structure, and aromatics. The wine then aged in a blend of new and used French oak barrels (likely 80% new or significant new-oak component, typical for Gran Reserva tier) for 12–14 months, imparting vanilla, spice, and complexity. Malolactic fermentation occurred in barrel, softening acidity and adding textural weight. Bottling followed, with the wine entering further evolution in-bottle.
