Tasting Notes

“Wines that aim to enchant with their freshness and intensity”

This unique wine is sourced from a combination of parcels from cool areas located in the Coastal Range of DO Maule that deliver lively and juicy wines with tremendous fruit intensity.

Los Compadres ( co – fathers or close friends related because one is the godfather of the other one’s child) refers to the friendship and partnership with growers of Cabernet Sauvignon that have trusted Vinos Baettig with grapes coming from the best lots of dry farmed vineyards with 30 or more years. These special parcels are close in term of quality and style providing different components to Vinos Baettig Cabernet Sauvignon.

The first vintage of Vino de Viñedo (vineyards selection) was 2021.

Francisco Baettig’s inaugural 2022 Los Compadres is a real cause for excitement. The celebrated Chilean winemaker and Cabernet Sauvignon specialist has been responsible for some exceptional Seña and Chadwick bottlings during his time as Errazuriz winemaker. This Cabernet Sauvignon is made from ancient dry-farmed vines in Maule. In keeping with the style of all Baettig’s own-label bottlings, these centuries-old, cool-climate Cabernet vines produce wines with incredible structure, freshness and complexity. The reliable Chilean sunshine also brings wonderful concentrated pure fruit notes to the wine. This inaugural Cabernet Sauvignon release is a blend of three vineyards. One of these sites consists of 120-year-old Pais vines grafted with Cabernet Sauvignon 60 years ago. The other two cool-climate sites are located in Chile’s coastal mountains, Cordillera de la Costa. At altitude, these dry-farmed vines ripen slowly and retain amazing energy. The nose of the 2022 Los Compadres Cabernet Sauvignon is fantastic – loads of floral potpourri aromas, violets, fresh blackcurrants, black cherry and Black Forest gateaux notes. The wine has impressive structural tannins that give a crunchy bite to the palate. The fruit remains very fresh while the added liquorice spice and peppery notes from some quality oak add complexity. It is almost Pauillac-esque with its graphite minerality thanks to the deep gravel soils found in this part of Maule. This is much drier and fresher than is typical of Cabernet from Chile but a fantastic fruit concentration is retained. The wine is aged in 30% new oak and older ex-Almaviva and Seña barrels for 18 months. Give this two to three years in bottle for the tannins to fully integrate and this will be singing.

Critic Scores

An altogether different take on what you might find with cabernet from Australia. Structure and weight wise it is more towards Coonawarra, but then it deviates with a more rustic grippy character of structure and poise. Floral rose petals and blackcurrant aromas with a trace of brick dust. The palate is still tightly woven with grainy tannins and fine-grained oak working well. It will handle cellaring.

The 2023 Vino de Viñedo Los Compadres was sourced from numerous old-vine sites in the Coronel de Maule region, all of which were planted with País over a century ago and have been grafted with Cabernet Sauvignon in the past few decades. It provides a unique perspective on Chilean Cabernet Sauvignon, characterized by a weightless density and umami-like texture that is entirely distinctive. The palate is fruit-driven yet impressively refined, featuring a seamless profile and a tense, grippy finish.

A lovely nose of beautiful ripe cassis and complex tobacco leaves, tobacco ash and roasted red peppers. Quite tannic, with lots of good acidity that invites you to refill your glass. A tight, austere grip at the end, but it’s not drying. It spent 10 months in oak barrels, of which 10% were new. Drink from 2026.

Vinification & Cultivation

Crafted only for our premium wines

Vineyard Cultivation

Los Compadres, the third vineyard in Baettig's Vino de Vinedo series, occupies a prime site in Maule's warm central valley floor. The vineyard's soils blend granite, alluvial sand, and clay, typical of Maule's prime Cabernet terroir and providing excellent drainage and heat retention. Mature vines, trained to traditional open canopies, benefit from strong diurnal temperature variation that develops full ripeness while preserving acidity. The 2023 season delivered warm, dry conditions ideal for Cabernet maturation, with véraison occurring in good time and harvest completed in peak condition through early April.

Vinification

Fruit was hand-sorted and destemmed before fermentation in stainless-steel vats with temperature control. Natural yeast fermentation proceeded over 10–12 days on skins, extracting colour and tannin structure at a measured pace. Following completion of dry fermentation, the wine transferred to French oak—predominantly one-year-old and neutral—for malolactic fermentation and 12 months of élevage. The final wine achieved balanced mid-weight structure with fine-grained tannin, reflecting Maule's characteristic profile.
