Wills Domain is a family-owned estate in the northern Margaret River, with vineyards at Yallingup Estate set on the gravelly, free-draining loams typical of the region's premium subdistricts. Margaret River's maritime climate, moderated by the Indian and Southern Oceans, gives long, even ripening ideal for structured, elegant sparkling base wines. The Cuvee d'Elevage Blanc de Blanc is a limited-edition sparkling built from Chardonnay with a portion of Scheurebe grown at Yallingup Estate. As a non-vintage cuvee it blends parcels to a house style, drawing on the site's capacity to hold fine natural acidity alongside ripe white-fruit and citrus character.

The Chardonnay and Scheurebe parcels were kept separate, gently pressed, briefly settled and racked to stainless steel fermenters for a cool, slow fermentation using a cultured yeast strain. The blend was tiraged and underwent secondary fermentation in bottle in the traditional method, then left on lees for over sixteen months to build yeast-autolytic complexity, toast and creamy texture before disgorgement. The wine was finished as a Blanc de Blanc-style sparkling that balances its citrus and orchard-fruit freshness with brioche and creamy depth. The precise dosage for this release is not published.
