The 2009 The Signature Cabernet Sauvignon Shiraz is aromatically lovely. On the palate, it's bloody, fine, sweetly fruited and layered with sweet bone marrow and cassis, with graphite, tobacco, dried mint and a hint of clove through the finish. The 2009 was matured in 35% new French barriques, French American and Hungarian hogshead, all Yalumba coopered. The 2009 vintage started with a lovely wet spring but was dry after that and low-yielding. And winemaker Louisa Rose says it was "always in the shadow of the showy 2008s." This here is polished and fine and absolutely lovely now. This was made with 52% Cabernet Sauvignon (sourced from Eden and Barossa Valleys), the balance Shiraz (sourced from Eden and Barossa Valleys). 13.5% alcohol, 6.8 total acidity, 3.48 pH, sealed under natural cork.
