Tasting Notes

A highly aromatic fruit and floral nose incorporating primary berries and plums. The entry is all fruit and juicy, then the tannins take a different and savoury form. An iodine and earthen rustic feel to the palate leaving you with a dry, savoury finish embedded into the fruit profile.

Winemaking

Hand harvested fruit, berry sorted to remove any undesirable berries, then gravity filled to two clay amphora. Hand plunged twice daily for a gentle extraction of the whole berries, then left on skins for 2 further months before separation of the wine from skins and seeds. Maturation back in the clay amphora for a total of 12 months. Slow micro-oxygenation in the amphora softens the grape tannins while preserving the fruit purity and terroir.

Varietals: Shiraz 60%, Cabernet Sauvignon 40%

Region: Yarra Valley, Victoria, Australia.

Vines: Shiraz from our Waterloo block and Cabernet Sauvignon from our Homestead block. We are always challenging ourselves to think about how best to make our wines, this is the first vintage made utilising two 500L clay amphora sourced from Spain.

Cellaring: A primary fruited and savoury wine, we think this one will cellar well for up to 5 years, after that we will be learning about this one ourselves, but for now choose your occasion and enjoy!

Critic Scores

This wine – made with cabernet and shiraz – was hand harvested, berry sorted, gravity filled to clay amphora, hand plunged twice daily and then left on skins for two months, prior to maturation in the clay amphora for a total of 12 months.

The cabernet influence is clear this year. There’s a briar note, a general rush of herbs, boysenberry and red cherry characters, loamy earth notes and a free-flowing push of curranty fruit. It’s fresh as hell but it also has substance. I’d reckon that this wine needs to be served alongside food but then, its frisky freshness makes for pleasurable drinking in any setting.
