Breeze is a lighter-alcohol prosecco style at 8.5% ABV, made from glera grown in Victoria, drawing on the cooler King Valley heartland of Australian prosecco where the variety keeps its bright acidity and floral, pear-scented character. Being a non-vintage, mid-strength wine, it is assembled for a consistent, easy-drinking house style rather than a single growing season, with fruit selected and picked to suit a fresher, lower-alcohol finished wine. Glera is picked early and pressed gently to protect its delicate pear and citrus aromatics, then cool-fermented to retain freshness. The sparkle is generated by a second fermentation in pressurised tank following the Charmat (tank) method customary for prosecco, which keeps the wine's primary fruit and soft, frothy mousse to the fore. To reach the mid-strength 8.5% target the wine is made in a lighter, lower-alcohol style while preserving the crisp, lightly sweet balance typical of the category.
