Campfire Elegy - Gentle Smoke and Bourbon Sweetness

 

This one's a mood: lightly peated single malt vatted from multiple casks, all ex-bourbon. Think soft smoke, smooth oak, and honeyed grain carried on a cool coastal breeze.

 

The nose is balanced and beautiful: vanilla bean, pear skin, campfire embers, and soft caramel. A flick of smoke rises through malt and oak, subtle but ever-present.

 

On the palate: golden syrup, lemon peel, toasted barley, and a drift of peat. The bourbon casks bring in creamy sweetness, roundness, and depth - nothing sharp, nothing overdone.

 

Mid-palate blooms with white chocolate, soft spice, green apple, and a hint of char. There's a clarity to the peat - it accents, not dominates.

 

Finish: clean and composed. Vanilla, grain, a kiss of smoke. This is whisky made with restraint, precision, and understanding of balance. A perfect introduction to peat for the curious, and a rewardingly elegant pour for seasoned drinkers.

Distillation

5Nines Distilling produces its lightly peated expression from South Australian-grown Pilsner barley, a portion of which is smoked using South Australian peat to deliver a measured smoky influence. After a seven-day fermentation, distillation occurs in the distillery's custom-built copper pot still. This vatted release combines multiple bourbon casks to achieve consistency and layered complexity, marrying lightly peated spirit with ex-bourbon wood's characteristic vanilla, caramel, and toasted oak notes. The blend is bottled at 44.2% ABV, lightly reduced from cask to preserve both peaty character and barrel-driven sweetness without chill filtration.

Provenance

5Nines Distilling is a small-batch single malt producer situated in the Adelaide Hills of South Australia, a cool-climate elevated region whose red clay soils and pronounced diurnal temperature variation suit spirit maturation. Founded in 2016 by David Pearse — a corporate IT architect — and Steven Griguol — a builder and sculptor — the distillery began in David's Adelaide Hills garage before relocating to larger premises on the Adelaide plains in late 2021, enabling seven-days-a-week production. Rather than purchasing equipment from a manufacturer, the pair designed and built their own copper pot still, retaining full control over distillation character. The distillery uses South Australian-grown and malted Pilsner barley across all its single malt expressions.
