5Nines Distilling uses South Australian-grown and malted Pilsner barley across its single malt range. Mashing and a seven-day fermentation precede distillation in the distillery's custom-built copper pot still. The Chardonnay Cask expression is matured in ex-Chardonnay wine barrels, whose previous contents infuse the spirit with stone fruit, light oak, and subtle white wine esters. The wine cask's contribution softens the spirit and adds a distinctive layer of vinous character uncommon in traditional Scotch-style malts. Bottled at 45% ABV, the expression is released without chill filtration to preserve its natural oils and full mouthfeel.

Founded in 2016 by David Pearse — a corporate IT architect — and Steven Griguol — a builder and sculptor — the distillery began in David's Adelaide Hills garage before relocating to larger premises on the Adelaide plains in late 2021, enabling seven-days-a-week production. Rather than purchasing equipment from a manufacturer, the pair designed and built their own copper pot still, retaining full control over distillation character. The distillery uses South Australian-grown and malted Pilsner barley across all its single malt expressions.
