Tasting Notes

Rustic Reverie - Fruit, Oak, and Hillside Air

 

Matured in ex-red wine casks from the Adelaide Hills, this is a whisky that wears its terroir with pride. Fruity, rounded, and just a little wild - it's a countryside dram built on sunlight and time.

 

Nose: plum skin, cherry wood, vanilla bean, and toasted oak. There's a lifted note of red apple and baking spice.

 

On the palate: warm and generous - stewed stone fruit, clove, raspberry jam, and caramelised malt. Tannins from the wine cask give grip, structure, and a soft dryness on the sides of the tongue.

 

Mid-palate: dried cranberry, cocoa nib, roasted nuts. The red wine influence is clear but never overpowering - it's an accent, not a costume.

 

Finish: medium-long with a fading cherry note and touch of cinnamon. A great gateway into Aussie wine-cask whisky with plenty of personality.

Distillation

5Nines Distilling uses South Australian-grown and malted Pilsner barley for all its single malt expressions, fermented over seven days before distillation in the distillery's custom-built copper pot still. The Hills Cask is a vatted expression that combines complementary casks including ex-bourbon, Altar wine, and Apera (South Australian sherry-style) barrels to create a well-rounded, approachable dram. The marriage of these cask types delivers a balance of vanilla and caramel from the bourbon wood, dried fruit and spice from the Apera, and vinous character from the Altar wine. Bottled at 45% ABV without chill filtration.

Provenance

5Nines Distilling is a small-batch single malt producer situated in the Adelaide Hills of South Australia, a cool-climate elevated region whose red clay soils and pronounced diurnal temperature variation suit spirit maturation. Founded in 2016 by David Pearse — a corporate IT architect — and Steven Griguol — a builder and sculptor — the distillery began in David's Adelaide Hills garage before relocating to larger premises on the Adelaide plains in late 2021, enabling seven-days-a-week production. Rather than purchasing equipment from a manufacturer, the pair designed and built their own copper pot still, retaining full control over distillation character. The distillery uses South Australian-grown and malted Pilsner barley across all its single malt expressions.

If you're a fan of Riesling, Clare Valley is a great place to explore and for a Maritime climate not dissimilar to parts of the Italian coastline, seek out the wines from McLaren Vale.
