Aphelion Wine Co is a small McLaren Vale producer founded in 2015 by Rob and Louise Mack, known for Grenache and Chenin Blanc. The Welkin range is its early-drinking line, and this sparkling draws on Chenin Blanc from McLaren Vale, where a warm maritime-influenced climate is moderated by afternoon gulf breezes and cooler elevated sites. Soils across the district range from sandy loams to ironstone over clay. The 2021 season in South Australia was mild with a cool, even ripening period that preserved acidity, well suited to a fresh sparkling base picked at moderate sugar to retain the variety's apple and quince line.

The 2021 base was fermented in neutral French barriques and held on lees to build texture before being transferred to tank for a second fermentation by the Charmat method. This tank approach preserves Chenin's bright apple, nashi pear, lanolin and quince character while adding a frothy, crunchy bead. The wine was bottled young for immediate drinking and finishes around 11.5% alcohol in a dry, gently frothy style. It was Aphelion's first sparkling release under the Welkin label.
