Tasting Notes

Dottore (Doctor) Matteo Ascheri is not only the 5th generation owner and winemaker of his family estate (established 1880), he also runs a 4 star resort and traditional 'Osteria' (restaurant) next to the winery in Bra. In addition to this, Matteo is the head of the Consorzio di Barolo, which makes all decisions about the future of this unique and highly-regarded region.

The Ascheri Barolo 'Pisapola' is sourced entirely from one of the family's 3 vineyards. Ethereal and elegant bouquet, with ripe fruit, violet and sweet spices notes. The palate is round, harmonious and velvety with an excellent persistence.

Critic Scores

The 2021 Barolo Pisapola is all class. Aromatic and lifted, the 2021 exudes finesse from start to finish. Dried herbs, crushed leaves, cedar, tobacco and incense open first, before tannins shut down the mid-palate and finish. There's plenty to look forward to, but readers have to be patient. Southeast exposure and elevation yield an especially floral, perfumed Barolo.

The Matteo Ascheri 2021 Barolo Pisapola ferments in stainless steel and moves over to Slovenian oak casks for aging. Like some of the other wines in this portfolio, it appears to lack the precision that this classic vintage delivers so effortlessly. On the bouquet, I get toasted bread, dark fruit and tobacco. However, what it lacks in focus it definitely delivers in intensity. This is a wine of power and richness. Production is 4,200 bottles.

Vineyard Cultivation

Ascheri is a family producer in Piedmont's Barolo DOCG, working heritage vineyards across multiple distinguished sites within the appellation. The region's calcareous marl and sandstone soils—varying in limestone and iron content—create the foundation for Barolo's complexity. Barolo's terroir divides into two distinct zones: the western valleys produce softer, aromatic wines; the eastern Serralunga Valley yields austere, powerful expressions requiring extended aging. The 2015 vintage benefited from favourable ripening conditions, with warm, dry summer months allowing full Nebbiolo maturation and phenolic ripeness essential for Barolo's characteristic structure.

Vinification

Barolo production traditionally demands extended skin contact during fermentation to extract the Nebbiolo grape's abundant tannins and colour. Ascheri employs 20–30 days of maceration on grape skins, extracting phenolic material essential to the wine's structure. Following fermentation, malolactic fermentation proceeds naturally, reducing acidity and adding complexity. DOCG regulations mandate minimum 38 months total aging, with at least 18 months in oak. Ascheri typically uses large, neutral oak casks—500-litre tonneaux or larger—for élevage, allowing gradual oxidative maturation without masking Nebbiolo's delicate aromatic profile. The wine's substantial tannin structure requires extended bottle age before drinking, developing secondary flavours.

Piedmont

Piedmont (Piemonte in Italian) is probably the finest wine region in all of Italy, and has laid claim to this since Roman times. It has a continental climate influenced by the surrounding Alps and Ligurian Apennines, and is located in the north-west of Italy, bordering both France and Switzerland.

Piedmont has only 1% of the total vineyards of Bordeaux and 15% that of Burgundy. So while a top Chateaux may produce upwards of 35,000 cases a year, leading Barolo producers will often make only 800 cases. More than half of its vineyards are registered with DOC designations and many are in the Apennine or Alpine foothills, from 300-600m above sea level. Most of the wines are produced by smaller family estates rather than larger holdings.

Piedmont has 46 different DOC and four DOCG regions, and produces the largest number of well known, world-recognized, prize-winning wines. The most famous would have to be Barolo or Barbaresco, whose power comes from the Nebbiolo grape variety. The most widely planted red variety is Barbera although Dolcetto, Muscat, Shiraz and Bonarda are also produced.

The white variety most well known is Moscato, which is often made into frizzante (bubbly) wines known as Asti. Cortese is made into the popular Gavi wines, and smaller amounts of Chardonnay and high quality Sparkling are also produced in the far north of Piedmont.
