Distillation

Autonomy Citrine Aperitivo is produced in Spotswood, Victoria, using post-pressed citrus peels from Melbourne's Market Juice operation, capturing the aromatic oils of lemon peel and Red Centre lime (Citrus glauca — an Australian native lime) before they are wasted. These are complemented by native lemongrass for delicate herbaceous fragrance and angelica root for earthy, bitter depth. The botanical blend is distilled and/or macerated before blending to 25% ABV. The result is a refreshingly bitter aperitivo with bright citrus and subtle native character, designed for use in aperitivo cocktails or served over ice with tonic.

Provenance

Autonomy Distillers is located in Spotswood, Victoria, founded in 2019 by an environmental scientist and a geochemist. The distillery centres its production on native Australian botanicals and sustainable ingredient sourcing. Autonomy partners with Market Juice in Melbourne to collect citrus peels that have already been pressed for fresh juice — preventing food waste and capturing fresh aromatic oils from ingredients otherwise destined for disposal. This 'not-yet-end-of-life' philosophy shapes each expression in the range. The Citrine Aperitivo is one of the distillery's signature bitter aperitivo expressions, representing Australian terroir through a combination of native and locally grown ingredients.

Victoria

The wine region of Victoria has the highest number of grape vines than any other state in Australia. It is home to over 600 wineries and well known regions such as Yarra valley, Heathcote, and Rutherglen. Victoria is situated in the southeastern corner of Australia where due to the location, the climate has a cool maritime influence and is known for their outstanding Pinot Noir and Chardonnay, along with producing Australia’s most famed dessert Muscat and Topaque wines.

There are a number of different terroir levels throughout the wine region of Victoria which leads to the production of different ranges of wines. In the southern region of Victoria, the vines are regulated by the cool winds of the Bass Strait. Central Victoria consists of mostly flat terrain that tends to be drier and warmer than the rest of Victoria, which results in more fruit concentrated wines. It may be surprising to note that Victoria is the third most productive wine region in Australia, seeing as it does not have as many areas suitable for viticulture, which has resulted in the cellar door culture of Victoria being concentrated with smaller, but more personal boutique wineries.
