Vineyard Cultivation

The Premium Pinot Noir is drawn from Bass Phillip's original estate plantings at Leongatha in South Gippsland, established by Phillip Jones from 1979 at close, Burgundian vine spacing on free-draining loam over clay in a cool, maritime climate. Yields are deliberately tiny and the vineyard has long been farmed biodynamically, with the Premium representing a selection of the estate's finest barrels. The 2018 season in Gippsland was warm and even, delivering ripe, generously fruited Pinot Noir with the perfume and fine tannin structure characteristic of the site, and good depth for medium-term cellaring.

Vinification

Fruit was hand-harvested and largely destemmed to whole berries, then wild-fermented in small open fermenters with hand-plunging over roughly a fortnight on skins. After a gentle pressing the wine was settled and gravity-racked to French Allier barriques, malolactic fermentation completing naturally in barrel. The Premium is matured in oak for an extended period, historically around eighteen months, with a portion of new wood, then racked off lees before bottling. Low-intervention handling, minimal sulphur and rigorous barrel selection underpin the powerful yet detailed, ageworthy style.
