Tasting Notes

Translated, it means "one hundred herbs" – and this amaro drinks like a herbal encyclopaedia soaked in mystery and mountain smoke. Made from wild botanicals foraged in the Cuneo Alps, this is a proper Italian digestivo – bitter, earthy, herbal, with no artificial flash.

The nose is forest floor and herbal medicine. Pine sap, gentian root, dried flowers, rhubarb, and the faintest touch of cinnamon. There is a wild complexity – like crushed alpine moss, orange peel, and medicinal bark. No one note dominates. It smells alive.

The palate is punchy and bitter from the start. Gentian, wormwood, and citrus rind give structure, while sweeter notes – honey, chamomile, maybe a touch of raisin – round the middle. Mid-palate it turns darker: myrrh, bay leaf, and the dry tang of green walnut. It finishes dry, bitter, and complex – like a walk through a botanical garden at dusk.

Drink it straight after dinner, or mix it 50/50 with Bordiga Vermouth for a stunning low-ABV sipper. This is grandpa's favourite amaro, if your grandpa was an alchemist.

Distillation

Bordiga Amaro Centum Herbis ('one hundred herbs') is produced at the Bordiga Distillery in Cuneo, Piedmont, using the original 1888 copper pot still that has been central to the house's production for over 130 years. The amaro recipe draws on a complex blend of alpine botanicals — including wild gentian, chamomile, juniper, and a range of regional herbs gathered from the surrounding Cuneo Alps — macerated and distilled into a high-proof spirit base before being reduced and blended. The result is a classically structured Italian bitter liqueur: herbal, rooty, and pleasingly bitter, suited to both digestivo service and cocktail use. Bottled at 28% ABV.

Provenance

Bordiga Distillery was founded in 1888 by Pietro Bordiga, a passionate herbalist and expert in alpine botanicals and oriental spices, in Cuneo at the foot of the Alps in Piedmont, Italy. The location was chosen deliberately for its access to wild officinal herbs growing in the surrounding mountains and its proximity to the Langhe wine region — homeland of Barolo and Barbaresco. An original copper pot still dating from 1888 remains at the heart of production. Bordiga's Vermouth recipe was so highly regarded that the legendary Caffè Mulassano in Turin — one of Italy's oldest cafés — had its Vermouth produced exclusively to the Bordiga recipe.
