Brezza's Barolo 'Sarmassa' designates fruit exclusively from the Sarmassa cru, one of La Morra's premium vineyard parcels situated within the Barolo DOCG zone. Sarmassa sits on a southeast-facing slope with distinctive marl-and-limestone soil composition, a unique terroir that encourages refined, crystalline Nebbiolo character with fine-grained tannin structure. The vineyard's aspect and elevation foster slow, complete ripening of Nebbiolo's small berries whilst preserving natural acidity and aromatic freshness. The specific soil mineralogy—dominated by marine fossils and calcareous deposits—contributes to the mineral undertones characteristic of Sarmassa Barolo. The 2021 vintage's cool growing conditions were particularly well-suited to Sarmassa's classical terroir expression, producing wine with bright acidity, finely structured tannins, and distinctive mineral aromatics that distinguish single-vineyard Barolo.

Vinification

Sarmassa fruit undergoes careful traditional fermentation in wooden vessels with 20–30 days of extended skin contact, building complexity, phenolic structure, and aromatic development characteristic of premium Barolo production. Following malolactic conversion in large oak, the wine is aged in traditional large wooden casks (botte) for the DOCG-required minimum of 38–42 months, allowing gradual softening of tannins and development of the complex tertiary aromas and leather, tobacco, and subtle truffle notes characteristic of aged Barolo. The extended wooden-vessel age—conducted without temperature control—facilitates slow, natural oxidative maturation and complete integration of all components. The single-vineyard designation reflects careful vinification selections and readiness assessment before bottling.
