Vineyard Cultivation

The Asili vineyard in Barbaresco is recognised as one of the region's most celebrated crus, commanding distinction for its complex and varied geology comprising calcareous marl, limestone deposits, and clay soils in precise proportions. Bruno Giacosa's holdings within Asili were established during the winery's founding decades and continue to be farmed with minimal chemical intervention, allowing the Nebbiolo vines to express the subtle nuances of terroir complexity that distinguish Barbaresco's finest sites. The vineyard management emphasises quality over quantity through canopy management and selective harvesting of fully ripened grapes. The 2017 vintage in Piedmont enjoyed balanced spring conditions followed by an excellent, warm autumn that allowed the Nebbiolo grapes to achieve full phenolic maturity whilst retaining the spicy aromatics and delicate perfume characteristic of Barbaresco.

Vinification

Hand-harvested Nebbiolo from Asili enters fermentation in temperature-controlled concrete vessels, where indigenous yeasts work steadily for 15–20 days. The fermentation is managed to extract colour and fine-grained tannin structure from the skins whilst preserving aromatic complexity. Following completion of primary fermentation, the wine undergoes malolactic conversion and ages in large neutral oak casks—the traditional vessel choice for Barolo and Barbaresco at Bruno Giacosa—for 24–30 months. This extended maturation in inert wood allows the wine to undergo natural clarification and gradual complexity development without oak flavour masks. The finished wine is typically aged in bottle before release, reflecting the winery's belief that Barbaresco benefits from time to reveal its elegance and perfumed structure.

The knowledge, passion and wisdom that Bruno Giacosa brings to his work as producer of fine wines is the fruit of the dedication of three generations of winemakers. Bruno is a perfectionist and this becomes obvious from the meticulousness with which he applies his craft specialising in the Nebbiolo grape and the wonderful wines it lends its hand to.

The Azienda Agricola Falletto Winery comprises twenty hectares of vineyards within the Serralunga d'Alba, La Morra and Barbaresco areas. The vine growing and wine making processes are followed through with care from beginning to end, culminating with vinification and ageing within the cellars in Neive.

The winemaking methods are traditional giving full respect of the grape’s typical characteristics.

Piedmont

Piedmont (Piemonte in Italian) is probably the finest wine region in all of Italy, and has laid claim to this since Roman times. It has a continental climate influenced by the surrounding Alps and Ligurian Apennines, and is located in the north-west of Italy, bordering both France and Switzerland.

Piedmont has only 1% of the total vineyards of Bordeaux and 15% that of Burgundy. So while a top Chateaux may produce upwards of 35,000 cases a year, leading Barolo producers will often make only 800 cases. More than half of its vineyards are registered with DOC designations and many are in the Apennine or Alpine foothills, from 300-600m above sea level. Most of the wines are produced by smaller family estates rather than larger holdings.

Piedmont has 46 different DOC and four DOCG regions, and produces the largest number of well known, world-recognized, prize-winning wines. The most famous would have to be Barolo or Barbaresco, whose power comes from the Nebbiolo grape variety. The most widely planted red variety is Barbera although Dolcetto, Muscat, Shiraz and Bonarda are also produced.

The white variety most well known is Moscato, which is often made into frizzante (bubbly) wines known as Asti. Cortese is made into the popular Gavi wines, and smaller amounts of Chardonnay and high quality Sparkling are also produced in the far north of Piedmont.
