      Intriguingly, the House of Drappier embarked on a remarkable experiment on October 4, 2020, immersing 3495 bottles of Champagne in the pristine waters of the Bay of Lannion, situated in the Cotes d'Armor off Brittany, France. Placed at a depth of 31 meters, the bottles enjoyed an environment with ideal conditions for aging: a constant temperature of 10 degrees Celsius, darkness, and an optimal level of pressure that minimized the loss of fizz during the aging process. These natural underwater elements near Brest in Brittany served as the perfect substitute for conventional storage, and remarkably, no energy consumption was required for this ingenious aging project, a testament to Drappier's forward-thinking approach in Champagne production.

      Fast forward to the summer of 2022, and 1368 of these carefully immersed bottles were delicately brought back to the surface, one of which is included in this very set.

    Based in the Urville region of Champagne, Drappier is something of a cult classic producer. Although you may not have never heard of the tightknit family winery, they're favourites to many - including, famously, the late, great Charles de Gaulle, who moved as close as he could to the winery in his retirement. Though Drappier was founded in 1808, the vines were planted and the cellars were built around Clairvaux Abbey by Saint Bernard and the Cistercian monks during the 12th Century. These cellars, some of the few that survived two World Wars, are among the oldest and most extensive in Europe today. Today, Drappier is one of the finest boutique producers in the world. Famous for making high quality wines with limited intervention and minimal sulphur, their small yields of fruit promise a premium expression of some prime Champagne real estate.
