Chandon Australia's Vintage Brut is drawn from a single declared year, and the 2018 season in the Yarra Valley followed a dry, relatively warm growing period that delivered clean, ripe fruit and even flowering. Fruit for the wine comes from the house's cool-climate vineyards across the Yarra Valley floor and higher-elevation Victorian sites established since Moet & Chandon founded the winery at Coldstream in 1986. Clay-loam valley soils and granitic upland ground, combined with careful canopy management and early picking, hold the acidity a vintage sparkling requires. Chardonnay and Pinot Noir dominate the blend, with Meunier in support, all selected from the 2018 harvest.

The 2018 base wines were picked early to retain acid and gently pressed, with fermentation in stainless steel to protect fruit definition. Being a vintage wine, only fruit from the 2018 harvest was used, with no reserve-wine blending. The wine was made by methode traditionnelle, undergoing its second fermentation in bottle and then an extended maturation on lees - longer than the non-vintage Brut - to develop toast, brioche and a fine creamy texture. After riddling and disgorgement it was finished with a brut dosage to balance the palate. The result is a structured, age-worthy vintage sparkling with citrus, nut and autolytic depth.
