Since the excellent 2023 vintage, a clear stylistic shift has manifested in this Pavie; the nose has depth, showing splendid spice over ripe fruit, blueberries, cassis, floral notes, with the wood subtly in the background; on the palate, silky-soft and creamy on the attack, then the structure grasps, the iron fist in a velvet glove, mighty and concentrated, yet with significantly more finesse than in earlier years, the tannins are of the highest quality, always present, never overwhelming; exceptionally long, salty, and with a fresh, dark-fruited finish. With 60% Cabernet Franc, Pavie 2025 sets a new estate record for the proportion of this grape variety in its grand vin. The bouquet certainly underscores this with its remarkable freshness, complemented by nuances of black berries and a subtle hint of toasting. The smooth, slightly saline attack highlights the wine's breadth and energy. It unfolds seamlessly, without any gaps or weaknesses. The cabernet franc really comes through, with fine, intense, racy tannins and great length. Chalky and focused. More restrained than past vintages, with superb tension at the end. Showing one of the deepest colors of the vintage, the perfume kicks off with black raspberries, mint leaves, black cherries, flowers, tobacco wrappers, licorice, spice, and espresso aromas. The palate is intensely concentrated, yet, there is so much lift, and energy, the wine feels almost relaxed on your palate. The waves of rich, dense, opulent, lush, and salty, mineral-infused berries start off strong, and keep on going. The mid-palate, and finish delivers its message of ripe, deep, black, with red fruits, spice, crushed stones, camphor, licorice, and dark chocolate without hesitation through to its endnotes that get close to the 60-second mark. The wine blends 60% Cabernet Franc, 30% Merlot, and 10% Cabernet Sauvignon, making this the highest percentage of Cabernet ever used in the blend. 14.3% ABV. 3.58 pH. Yet in recent years, it has shifted, moving beyond sheer display toward a more measured command of pace. The 2025 vintage marks the culmination of this transformation. Raising the glass, you can almost see a grand gown, its sweeping violet-laced skirt adorned with blueberry, mulberry, and black olive, not scattered, but arranged in clear, ordered layers.
