Chief's Son 900 Sweet Peat is produced from Scottish barley malted to 900 PPM phenol — an extraordinarily high peating level relative to commercial benchmarks — providing an intense smoke and medicinal character in the new-make spirit. The wash is sourced in collaboration with Mornington Peninsula Brewery before distillation at the Chief's Son Distillery in Somers. The spirit is matured in ex-Seppeltsfield fortified wine casks — sourced from South Australia's historic Seppeltsfield winery — which impart notes of dried fruit, dark chocolate, and toffee that counter and complement the intense peat smoke, producing the 'sweet peat' character. Bottled at 45% ABV from a single cask.

Chief's Son Distillery was established in 2013 by Stuart and Naomi McIntosh in Somers on the Mornington Peninsula, Victoria — the only single malt whisky distillery on the Peninsula and one of the largest family-owned and operated craft distilleries in Australia. Located approximately 80 kilometres south-east of Melbourne, the distillery draws on the Peninsula's cool maritime climate for maturation. The '900 Sweet Peat' expression takes its name from the extraordinary 900 PPM phenol peating level of the Scottish barley used — an intense peat specification that sits well above standard heavily peated whisky, combined with sweet fortified wine cask maturation.
