Cirillo 1850 produces old-vine Grenache from pre-phylloxera plantings in the Barossa Valley's warmest microsites. The Ancestor Vine vineyard encompasses bushvines planted over 130 years ago, their deep root systems accessing clay-loam soils enriched by decades of leaf litter and organic matter. The 2019 vintage was exceptionally warm across South Australia, with temperatures well above long-term averages and minimal rainfall during flowering; canopy stress was managed through careful leaf manipulation and selective bunch thinning to achieve concentration. The low-vigour, old-vine phenotype naturally limits yields, intensifying flavour in surviving bunches.

Hand-harvested Grenache berries were destemmed entirely, retaining whole berries in fermentation vessels. Fermentation occurred in open concrete or wooden vats with extended post-ferment maceration (15–20 days), maximising colour and phenolic extraction from the thin-skinned variety. The resulting wine aged for 18–24 months in a blend of one and two-year-old French and American oak, allowing softer character development whilst retaining the inherent spice and wild-berry profile of aged Barossa Grenache. Minimal intervention throughout ensured natural tannin integration.
