Highland Park is one of few distilleries that still maintains its own floor maltings, using locally harvested Orkney heather peat to produce a lightly peated spirit with a distinctive floral heather character. The distillery is known for its use of first-fill European and American sherry casks alongside refill casks, producing a balanced spirit of smoke, sherry fruit, and heather honey.
