      Fermentation occurs in old open fermenters with hand plunging of the cap. The wine is pressed into both new and old American oak barriques and hogsheads where it is matured for 15 months. The wine is subsequently matured for 18 months in bottle prior to release. Brooding deep ruby/purple red in colour. The bouquet shows a complex array of licorice and nutmeg and cinnamon spices with fragrances of fresh tobacco and violets. The palate is rich and soft, with excellent structure. It displays intense concentration of ripe berry fruit and sweet spices, balanced by well-integrated oak and firm tannins. The flavours coat the palate and linger on the finish.
