Domaine de Canton is a French ginger liqueur of remarkable poise - marrying fresh baby ginger from Asia with VSOP Cognac, vanilla, honey, and Provençal herbs. Bottled at 28% ABV, it is rich without being cloying, spicy without being sharp - a liqueur designed for both mixing and sipping.

Crafted in Jarnac, in the heart of Cognac country, the process is layered and artisanal: ginger is peeled and cut by hand, macerated in eau-de-vie, and blended with Cognac rested in French oak. The result is golden-hued, aromatic, and textural.

The nose is vibrant with ginger, citrus, and warm spice. The palate shows honeyed heat, vanilla, lemongrass, and pepper, all carried on a smooth, rounded structure.

Serve chilled, in cocktails like the Penicillin, Ginger Sidecar, or French Mule - or drizzle over fruit or panna cotta for a dessert flourish. A versatile staple that straddles bar and kitchen with style.

Distillation

Domaine de Canton is produced in Jarnac, Charente, under the supervision of a fourth-generation Master Distiller. Fresh baby ginger is cut by hand and twice infused in Grande Champagne VSOP Cognac to extract its delicate floral heat. The ginger-infused Cognac is then blended with Grande Champagne XO Cognac, an eau-de-vie base, Tahitian vanilla beans, Provençal orange blossom honey, Tunisian ginseng, and a proprietary blend of herbs and spices. The resulting liqueur balances the natural heat of fresh ginger with floral Cognac sweetness, honey, and aromatic spice. Presented at 28% ABV.

Provenance

Domaine de Canton is a French ginger liqueur inspired by the colonial Indochine tradition of blending ginger-infused elixirs with fine Cognac. The liqueur is produced in Jarnac, in the Charente — the heart of the Cognac appellation — drawing on the region's four-century heritage of Charentais pot still distillation. The ginger used is 'baby ginger' — harvested young before the rhizome's heat becomes sharp — macerated with Grande Champagne Cognac. Complementary ingredients include Tahitian vanilla beans, Provençal honey, Tunisian ginseng, and additional herbs and spices. The name references the French colonial domain tradition, evoking the spice routes of South-East Asia.

Cognac

Cognac is named after the town of Cognac in France and is a variety of brandy. It is produced in the wine-growing region surrounding the town from which it takes its name. Ugni Blanc, which is known locally as Saint-Emilion, is the one most commonly used grape to produce Cognac. The region is divided in to six zones, Grande Champagne, Petite Champagne, Bordeies, Fins Bois, Bon Bois and lastly Bois Ordinaire, not to be confused with Champagne, the premier sparkling wine region in north east France.

Strict guidelines must be followed for a distilled brandy to be legally labelled as a Cognac by the Appellation d’origine contrôlée. Only specific grapes are allowed to be used, of which Ugni Blanc is the most common. The brandy must be distilled twice in copper pot stills and aged for a minimum of 24 months in French oak barrels from Limousis or Tronçais.

Blending is very common in Cognacs, and the age is derived from the age of the youngest grapes used in the blend. Cognacs develop and age in a similar way to Scotch Whiskies, though most Cognacs can age much longer than the legal requirement due to the time spent in the French oak barrels.
